Food and wine in Salamanca: a journey through the territorial cuisine of Choapa

Family vineyards, valley cuisine and local products: how gastronomy defines the character of Choapa

The Choapa Valley does not produce wine on an industrial scale. It produces wine from 3 to 5 hectares, where the owner walks among the vines every morning. That scale, that closeness, is what defines the gastronomy of Choapa.

The vineyard as an experience

In Salamanca (and towards Cuncumén), the vineyard is not a tourist destination: it is a way of life. A wine tour in Choapa means:

- Walking between the plants

- Talking with the winemaker, not a guide

- Tasting things that are not on the label

- Eating what was harvested last week

Main vineyards:

- Viña Salamanca (Cuncumén): a small vineyard, private pairing experiences

- Viña Faupin (Coirón): experimental varieties, a scientific approach

- Viña Arboleda (inland): micro scale, families who experiment

Book at least one week in advance. Visits are for groups (maximum 10 people) and always with the owner.

Territorial cuisine

It is not haute cuisine. It is cooking with what exists here.

From the sea

Los Vilos and Pichidangui have direct access to the fishing landings. Conger eel, rudd, sea urchin, mussels. Local food businesses buy directly from fishermen.

Where to eat: local restaurants in Los Vilos, tables at the cabins in Pichidangui

From the field

Zucchini, tomatoes, chilies. Small gardens at each business. Local cheeses (some experimental). Lamb from breeders in the area.

From the mountains

Wild mushrooms (in season). Fruit from old trees. Herbal drinks, each one with a recipe a grandmother keeps.

Local products to take home

If you want to bring something home:

- Wine: bottles from Viña Salamanca, Faupin or Arboleda (buy directly, it is cheaper)

- Jams: blackberry, raspberry, peach (made by women from the local businesses)

- Cheeses: some experimental, non-standard types

- Herbs: boldo tea, chamomile, local ginger tea

- Oils: olive oil from small producers

Bookings and contact

Almost all the businesses offer gastronomy experiences, but they are NOT on Tripadvisor or other platforms. Contact them directly:

- Via WhatsApp from our platform (each business has its number)

- Mention: number of people, date, preferences (gluten-free, vegetarian, etc.)

- Agree on the notice needed in advance

The philosophy of local cooking

Gastronomy in Choapa does not try to compete with restaurants in Santiago. It offers something different: authenticity, human scale, contact with the people who produce the food.

That is what makes a dinner in Choapa memorable.
